Asparagus Fried(Asparagi Fritta)

  1. Cut
  2. off
  3. tough
  4. asparagus ends.
  5. Soak in cold water to remove any sand.
  6. Drain and rinse again.
  7. Cut a 1-inch slit up the center
  8. of each stem.
  9. Bring 1 quart of salted water to a boil and
  10. cook
  11. on steaming rack or upright in asparagus pan. When just
  12. tender,
  13. 7 to 9 minutes, depending on size, drain. Whisk eggs, 1/4 teaspoon salt and pepper in shallow bowl; set aside. When
  14. asparagus
  15. are cool to touch, split asparagus at cut.
  16. Dip split asparagus in flour and then into beaten eggs. Bunching
  17. 2 to
  18. 3
  19. halves
  20. together;
  21. fry in hot oil in large skillet
  22. until lightly
  23. golden
  24. on each side.
  25. Place on paper towel
  26. to
  27. drain and
  28. then
  29. onto
  30. serving
  31. platter.
  32. Sprinkle lightly with Parmesan cheese.
  33. Makes 6 to 8 servings.
