Meatloaf Muffins

  1. Preheat oven to 350 degrees F.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add chopped onion, chopped carrot, dried oregano and minced garlic.
  4. Saute 2 minutes.
  5. Take off the heat and allow to cool completely.
  6. Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl.
  7. Spoon the meat mixture into 12 muffin cups coated with cooking spray.
  8. Top each with 2 teaspoons ketchup.
  9. Bake at 350 degrees F for 25 minutes or until a thermometer registers 160 degrees F. Let stand for 5 minutes.
  10. While the meatloaf is cooking, make the mashed potatoes.
  11. Place potatoes in a saucepan and cover with water.
  12. Bring to a boil.
  13. Cover, reduce heat and simmer 10 minutes or until tender.
  14. Drain.
  15. Put potatoes into a ricer for best results.
  16. Return potatoes to pan.
  17. Add milk along with the remaining ingredients and stir with a spoon to desired consistency.
  18. If they are not creamy enough for you, add up to 1/4 cup more milk - although they need to be stiff enough to pipe on top.
  19. Put the potatoes into a pastry bag with a wide star tip and pipe the mashed potatoes on top of the meatloaf.
  20. Sprinkle with bacon crumbles and chopped chives.
