Gyro Meat Loaf with Tzatziki Sauce
- 1 packages frozen chopped spinach, thawed and squeezed dry
- 1 cup dry bread cumbs
- 1 small onion, finely chopped
- 2 eggs, lightly beaten
- 1/4 cup grated Romano cheese
- 2 tsp dried oregano
- 1 1/2 tsp garlic powder
- 1/2 tsp salt
- 2 lb ground lamb or ground beef
- 1 cup refrigerated tzatzkiki sauce
- preheat oven for 350
- in a large bowl combine first eight ingredients
- crumble lamb over mixture and mix well
- shape into loaf and place into greased 11in- x 7 in
- bake uncovered for 55-60 min or until no longer pink
- let cool and serve with tzatziki sauce
