England-Style Bean Soup(You Can Make This Soup In Less Than 20 Minutes.)
- 1 c. finely chopped ham
- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
- 2 Tbsp. bacon drippings
- 1 (1 lb.) can tomatoes, cut up
- 1/2 c. water
- 1 Tbsp. brown sugar
- 1 Tbsp. vinegar
- 1/2 tsp. salt
- 1 (1 lb. 6 oz.) can New England-Style baked beans
- Cook ham, onion and green pepper in bacon drippings in large skillet until meat is browned and vegetables are tender.
- Add tomatoes, water, brown sugar, vinegar and salt.
- Cover and simmer 10 minutes.
- (You may have to put into a larger saucepan.) Reserve 1 cup beans from can.
- Mash the remainder.
- Add reserved and mashed beans to soup.
- Heat thoroughly, stirring occasionally. Makes about 5 cups.
- (Serve with a slice of corn bread, lettuce salad, baked apple or other fruit and cookies, with milk to drink. Makes a great meal.)
