Crockpot Chicken Tortilla Soup
- 1 lb chicken breast
- 15 ounces diced tomatoes
- 10 ounces enchilada sauce
- 1 medium onion, chopped
- 4 ounces green chili peppers
- 2 garlic cloves, minced
- 2 cups water
- 15 ounces chicken broth
- 1 teaspoon cumin
- 14 teaspoon black pepper
- 8 34 ounces corn
- 8 34 ounces black beans
- 1 teaspoon chili powder
- 1 teaspoon salt
- Add all ingredients to crockpot and cook 6-8 hours.
- pull out chicken and shred it, return chicken to crockpot.
- serve topped with your choice of cheese, tortilla chips or avocado.
