Canadian Cottage Cheese Cake Recipe

  1. Combine crust ingredients and press into a 9 inch springform pan and bake 350 for 10 min and cold.
  2. For filling: press cheese through sieve into a bowl.
  3. Add in Large eggs one at a time.
  4. Beat in flour and sugar.
  5. Stir in rind and juice and vanilla.
  6. Whip cream and mix in.
  7. Pour into crust.
  8. Bake 350 1 hour and 10 mins or possibly till set.
  9. Cold and chill.
  10. For topping: Blend berries to puree.
  11. add in sugar and cornstarch with juice and rind.
  12. Cook thick and clear.
  13. Place whole berries over chilled cake.
  14. Pour on hot glaze and refrigeratetill set.
