Almond Date Truffles
- 15 whole Medjool Dates, Pitted
- 1/2 cups Almonds
- 3/4 cups Ground Almonds
- 1 Tablespoon Honey
- 1/4 cups Cocoa Powder
- 1/2 teaspoons Sea Salt
- 1 Tablespoon Coconut Flakes, Chocolate Sprinkles, Cinnamon Or Other Toppings
- Soak pitted dates in hot water for a few minutes to soften.
- Squeeze out excess water.
- In a food processor, pulse almonds, ground almonds, honey and cocoa powder until finely ground.
- Add dates and sea salt and pulse until a thick and sticky ball forms.
- Remove the ball from the kitchen machine.
- Divide into portions and roll into 1-inch balls.
- Put the little balls on a baking sheet and place in the refrigerator until they have set enough and are no longer sticky.
- Roll balls in the toppings of your choice.
- I used coconut flakes, chocolate sprinkles, cinnamon and ground almonds.
