Almond Date Truffles

  1. Soak pitted dates in hot water for a few minutes to soften.
  2. Squeeze out excess water.
  3. In a food processor, pulse almonds, ground almonds, honey and cocoa powder until finely ground.
  4. Add dates and sea salt and pulse until a thick and sticky ball forms.
  5. Remove the ball from the kitchen machine.
  6. Divide into portions and roll into 1-inch balls.
  7. Put the little balls on a baking sheet and place in the refrigerator until they have set enough and are no longer sticky.
  8. Roll balls in the toppings of your choice.
  9. I used coconut flakes, chocolate sprinkles, cinnamon and ground almonds.
