Open Face Reuben

  1. Heat olive oil over low heat.
  2. Separate onion slices into thin rings; add with garlic to hot pan.
  3. Saute until golden, turning over onion rings occasionally.
  4. Heat broiler or toaster oven.
  5. Place one slice of cheese atop each slice of bread; place into oven, cooking just until cheese bubbles.
  6. Remove from oven and spread 1 tsp.
  7. dressing on each half; top each side with half the onions.
  8. Cook peas per package instructions; season as desired with salt-free seasoning.
  9. Enjoy a nectarine for dessert.
  10. Serve your meal with a glass of water.
