Top Shelf Julep
- 10 mint leaves, plus 2 mint sprigs for garnish
- 3/4 ounce Simple Syrup
- 1 1/2 ounces overproof bourbon
- 3/4 ounce peach eau-de-vie
- Crushed ice
- 1/2 ounce aged pot still rum
- In a highball glass, muddle the mint leaves with the Simple Syrup, then add the bourbon and eau-de-vie.
- Add crushed ice and stir, then add more crushed ice to fill the glass.
- Top with the rum and arrange the mint sprigs in the center of the drink.
