Chocolate Doughnuts

  1. In a saucepan over hot, but not boiling, water, melt the unsweetened chocolate with 2 tablespoons sweet butter.
  2. Cool. Meanwhile, beat 3 eggs with sugar and sour milk.
  3. Still beating, add the chocolate and butter mixture.
  4. Sift flour with soda, baking powder, salt and nutmeg or mace; add lemon peel.
  5. Blend the sifted ingredients into the egg mixture; beat a few strokes. Chill the dough for easier handling. Turn onto a lightly floured board.
  6. Roll it out 1-inch thick, handling as little as possible, and cut into rounds with a floured doughnut cutter.
