Supreme Potato Casserole
- 3 medium potatoes
- 1 cup fat-free cottage cheese (8oz)
- 12 cup reduced-fat sour cream
- 1 tablespoon nonfat milk
- 1 teaspoon sugar
- 12 teaspoon salt
- 18 teaspoon garlic powder
- 2 tablespoons sliced green onions
- 12 cup reduced-fat cheddar cheese, shredded
- Place ptatoes in a large sauce pan, cover with water.
- Cover and bring to a boil.
- Reduce heat and cook for 10-15min until tender.
- Drain, peel, and cut into cubes.
- In a blender or food processor combine cottage cheese, sour cream, milk, sugar, salt, and garlic pwd.
- Cover and pulse until smooth.
- In a large bowl mix potatoes and cottage cheese mixture and green onion.
- Pour into a 1 quart baking dish coated with nonstick cooking spray.
- Bake uncovered at 350 for 30min, sprinkle with cheese and bake 15 min longer until cheese is melted.
