Vegetable Fettuccine
- 1 packet instant chicken broth and seasoning mix
- 2 medium carrots, cut into strips
- 1 medium red or green pepper, cut into strips
- 1 medium squash or zucchini, cut into strips
- 4 1/2 oz. fettuccini, cooked and drained
- 2 Tbsp. plus 2 tsp. reduced calorie (tub) margarine
- 1 Tbsp. minced scallions
- ground black pepper to taste
- In 11 x 7-inch baking dish, dissolve broth; mix in 1/4 cup water.
- Add carrots; microwave covered (wax paper) on High 3 to 4 minutes until softened.
- Add bell pepper and zucchini or squash; microwave covered on High 3 to 4 minutes until vegetables are tender-crisp, stirring halfway through cooking.
- Stir in fettuccini and margarine; toss gently to combine.
- Sprinkle with scallions and black pepper.
