Vegetable Fettuccine

  1. In 11 x 7-inch baking dish, dissolve broth; mix in 1/4 cup water.
  2. Add carrots; microwave covered (wax paper) on High 3 to 4 minutes until softened.
  3. Add bell pepper and zucchini or squash; microwave covered on High 3 to 4 minutes until vegetables are tender-crisp, stirring halfway through cooking.
  4. Stir in fettuccini and margarine; toss gently to combine.
  5. Sprinkle with scallions and black pepper.
