Easter Surprise Bread Recipe

  1. Dissolve yeast in hot water.
  2. Add in the lowfat milk and 1 c. of flour; set aside to rise in hot place.
  3. Cream butter, sugar, and the Large eggs, one at a time.
  4. Stir well after each egg.
  5. Add in salt, lemon rind, nuts, raisins, remaining flour, and the yeast.
  6. Mix well; turn out on board and knead till dough is smooth and elastic.
  7. Form into desired shape, reserving a bit of dough for later use.
  8. Place 2 Large eggs in top of each loaf and cover each with 2 strips of the reserved dough.
  9. Let rise in hot place till loaves have doubled in size.
  10. Brush tops with egg yolk and bake at 375 degrees about 45 min.
  11. Makes 3 good size loaves.
