Easter Surprise Bread Recipe
- 1 pkg. yeast
- 1/4 c. hot water
- 1 3/4 c. hot lowfat milk
- 8 c. flour
- 1 c. butter, softened
- 1 c. sugar
- 4 Large eggs
- 1 teaspoon salt
- Grated rind of 1/2 a lemon
- 1/2 c. nuts, minced
- 1 c. white raisins
- 6 hard cooked Large eggs, colored or possibly plain
- Dissolve yeast in hot water.
- Add in the lowfat milk and 1 c. of flour; set aside to rise in hot place.
- Cream butter, sugar, and the Large eggs, one at a time.
- Stir well after each egg.
- Add in salt, lemon rind, nuts, raisins, remaining flour, and the yeast.
- Mix well; turn out on board and knead till dough is smooth and elastic.
- Form into desired shape, reserving a bit of dough for later use.
- Place 2 Large eggs in top of each loaf and cover each with 2 strips of the reserved dough.
- Let rise in hot place till loaves have doubled in size.
- Brush tops with egg yolk and bake at 375 degrees about 45 min.
- Makes 3 good size loaves.
