Mexican Meat Loaf(Weight Watchers Recipe)

  1. Preheat oven to 375u0b0.
  2. In a 9-inch skillet, heat oil over medium heat; add onions, peppers, garlic and broth mix.
  3. Saute until onions are translucent.
  4. In medium bowl, combine sauteed vegetables with remaining ingredients.
  5. Shape mixture into a loaf and place in an 8 x 8-inch pan.
  6. Bake until browned, about 45 minutes.
  7. Makes 4 servings.
