Mexican Meat Loaf(Weight Watchers Recipe)
- 1 Tbsp. plus 1 tsp. vegetable oil
- 1 c. chopped onions
- 1 c. chopped red or green bell peppers
- 2 garlic cloves, minced
- 1 pkg. instant beef broth and seasoning mix
- 15 oz. ground veal or ground turkey
- 4 oz. Cheddar cheese, shredded
- 3/4 c. plain dried bread crumbs
- 1/2 c. tomato sauce
- 1/4 c. plain yogurt
- 2 Tbsp. chopped fresh parsley
- 2 tsp. Worcestershire sauce
- 1 tsp. chili powder
- dash of pepper
- Preheat oven to 375u0b0.
- In a 9-inch skillet, heat oil over medium heat; add onions, peppers, garlic and broth mix.
- Saute until onions are translucent.
- In medium bowl, combine sauteed vegetables with remaining ingredients.
- Shape mixture into a loaf and place in an 8 x 8-inch pan.
- Bake until browned, about 45 minutes.
- Makes 4 servings.
