Super Rich Double Chocolate Cake

  1. Grease and line a 20cm round cake tin.
  2. Melt the chocolate with the water in the microwave, every 30 seconds give it a stir.
  3. Set aside once melted to cool slightly.
  4. Cream the butter and sugar.
  5. Add the eggs, beat well after each addition.
  6. Fold in the chocolate mixture.
  7. Sift in the flour and cocoa - fold through.
  8. Don't over mix or your cake will sag in the middle.
  9. Pour into prepared tin and bake at 180oC for 45-55 minutes (or until centre is springy when pressed lightly.
  10. Cool for 10 minutes in tin before turning onto a wire rack.
  11. Frost when fully cooled to room temperature.
