Fifteen Bean Soup

  1. Wash beans thoroughly.
  2. Let soak in two quarts of water overnight or a minimum of 3 hours.
  3. Drain and rinse.
  4. Cook in 2 quarts of water and tablespoon salt for approximately 2 hours.
  5. Add onion, black pepper, tomatoes and summer sausage.
  6. Then cook another 45 minutes.
  7. Add chickpeas, black-eyed peas and package of Cajun seasoning (season to taste).
  8. Cook 15 more minutes, then serve.
  9. Serves approximately 10 persons.
  10. Excellent with white or brown rice on the side and cornbread.
