Healthier Mac and Cheese
- 2 cup uncooked multigrain elbows
- 3/4 cup shredded cheddar cheese
- 3/4 cup shredded parmesan
- 1/2 cup skim milk
- 2 egg whites lightly beaten
- 1/4 cup reduced fat sour cream
- 1 tbsp dijon mustard
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 cup chopped cauliflower
- 1/4 cup soft whole wheat bread crumbs
- 1 1/2 can sweet corn
- preheat oven to 350
- prepare macaroni according to package.drain well.
- combine cheeses.and next 9 ingredients in a bowl.stir mixture into warm macaroni.
- spoon into 1 and a half quart casserole dish coated with cooking spray.
- bake 30 to 35 minutes or until bubbly
- enjoy!
- Crockpot on high for 1-2 hours
