Tomatoes Country Style
- 1 garlic clove
- 1/4 c. minced parsley
- 1/4 t. salt
- 8 oz. pkg. cream cheese, softened
- 1 t. chopped fresh, or 1/2 t. basil
- 4 large beefsteak or large tomatoes
- 1/2 c. all purpose flour
- 1 egg beaten with 1 T. milk
- 2/3 c. dried bread crumbs
- 3 T. butter
- 3 T. olive oil
- Fresh basil or parsley, optional
- Beat together garlic, salt, and basil (if desired).
- Cut tomatoes into 12 even slices about 1/2 in. thick.
- Spread 6 slices with about 2 T. of softened cream cheese then top with remaining slices to make 6 sandwiches.
- Dip each in flour then egg mixture and finally in crumbs.
- Fry on both sides over medium heat in mixture of butter and olive oil until brown.
- Garnish with parsley if desired.
