Skillet Lasagna(Serves 6)
- 1 lb. ground beef
- 2 Tbsp. butter
- 1 pkg. noodles
- 1 lb. cottage cheese
- 1 pkg. spaghetti sauce mix
- 2 tsp. basil leaves
- 2 tsp. parsley flakes
- 1 tsp. salt
- 1 lb. can tomatoes
- 1 (8 oz.) can tomato sauce
- 1 (8 oz.) pkg. Mozzarella cheese
- 1 c. water
- Use electric skillet. Brown ground beef in butter. Sprinkle with 1/2 package of spaghetti sauce mix. Spoon cottage cheese over meat and top with 3 cups noodles (uncooked) in a layer; sprinkle remaining spaghetti sauce mix. Sprinkle basil leaves, parsley flakes and salt. Pour tomatoes, tomato sauce and water over top. Make sure all is moistened. Bring to a boil; cover and simmer 35 minutes or until noodles are tender. Sprinkle Mozzarella cheese over top and cover; let stand 5 minutes.
