Stuffed Green Peppers
- 8 to 10 large green peppers
- 2 1/2 lb. ground beef
- 2 c. bread crumbs
- 2/3 c. grated Parmesan cheese
- 4 c. cooked white rice
- 1/2 c. minced onions
- 4 garlic cloves, crushed
- 2 tsp. basil
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 c. water
- 2 c. spaghetti sauce
- Cut off tops of peppers and clean out seeds. Steam peppers until just done. Cool. Mix remaining ingredients, except for sauce. Pour sauce in a large pan. Being careful not to split peppers, stuff and lower gently into sauce. Simmer, covered, for about 2 hours. Stir carefully and occasionally during cooking time. Cut peppers in half; lay open on plate and drizzle with spaghetti sauce. Pass extra sauce and additional grated cheese.
