Dorset Apple Cake
- 1 lb apples ( sour if possible)
- 4 oz sultanas
- 6 oz butter /soft margarine
- 12 oz self raising flour
- 1 tsp ground ginger
- 6 oz sugar
- 3 eggs
- Peel ,core and grate apples
- Mix flour ,ginger and butter / margarine together until it resembles crumbs
- Add sugar ,apples and sultanas.
- Beat the eggs and add to mixture.
- Mix until well combined
- Grease and line a 2 lb loaf tin , pour mixture in., level top.
- Bake at 180c for 1 hour, until a skewer / toothpick comes out clean.
- Allow to cool in tin for 10 minutes then tip out on to wire rack to cool.
- Serve.
- Can be served warm or cold
- You can substitute ground cinnamon for the ginger.
- I use demerara sugar, but you can use white or golden.
