Cowboy Stew
- 1 Tbsp. oleo
- 1 onion, chopped
- 1/4 c. chopped celery
- 1/2 clove garlic, chopped
- 1 Tbsp. chili powder
- 1 (16 oz.) can tomatoes
- 1 (16 oz.) can whole kernel corn
- 4 medium potatoes, chunked
- water (if necessary)
- 1 can Ro-Tel tomatoes
- 2 lb. ground meat
- 4 green onions, chopped
- 1/4 c. bell pepper, chopped
- salt and pepper
- 1/4 tsp. sugar
- 1 (23 oz.) can Ranch Style beans
- 1 (16 oz.) can mixed vegetables
- Melt margarine. Add meat and brown well. Drain. Add onion, celery, garlic, green onions and bell pepper. Saute until soft. Add salt, pepper, chili powder and sugar. Stir well.
- Add tomatoes, corn, beans, potatoes and water, if necessary. Stir together and bring to a boil, stirring frequently, to keep from scorching.
- Simmer on low 40 minutes until potatoes are tender.
