Sweet Corn Bread
- 1/4 lb butter
- 1 cup sugar
- 2 medium eggs
- 1 cup Corn meal
- 1 1/2 cup flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cup Milk
- Preheat oven to 375
- Cream butter and sugar together.
- Add eggs and corn meal
- In a separate bowl, stir dry ingredients together (sift if you prefer, but I'm lazy, so I skip that step).
- Add 1/3 of the flour mixture to the corn meal mixture and combine.
- Add 1/2 cup of milk and combine.
- Repeat above steps until all flour and milk has been added.
- Pour into greased 7 X 11 inch pan and bake for 40 minutes or until toothpick comes out dry.
- Can also be baked in a corn bread pan or muffin tins.
- It will yield 20 - 24 muffins.
