Taco Joes
- 1/2 lb. lean ground beef
- 1 medium onion, chopped
- 1 clove garlic, minced or pressed (optional)
- 1 (14 1/2 oz.) can tomatoes
- 2 Tbsp. catsup
- 1 to 2 tsp. chili powder
- 1 tsp. salt
- 1 tsp. Dijon-style mustard
- 4 large hamburger buns, split (plain or with sesame seed), buttered
- 1 c. shredded Cheddar cheese
- 2 c. shredded iceberg lettuce
- diced tomatoes for garnish
- black olives for garnish
- taco sauce (if desired)
- In skillet, saute beef, onion and garlic until meat is no longer pink and onion is tender.
- Drain.
- Stir in tomatoes, catsup, chili powder to taste, salt and mustard.
- Simmer, uncovered, for 10 minutes or until most of the liquid has evaporated.
- Spoon meat mixture into hamburger buns.
- Top with shredded cheese and lettuce.
- Sprinkle with diced tomatoes.
- Makes 4 servings.
