Low Calorie Chicken Orientale

  1. Place the chicken pieces, skin side up, in a shallow baking dish.
  2. Surround with pineapple chunks.
  3. Mix juice with vinegar, soy sauce, mustard, salt and pepper.
  4. Pour over chicken.
  5. Bake, uncovered, in moderate oven (325u0b0) for 40 minutes, basting occasionally.
  6. Add pepper strips.
  7. Combine cornstarch with water in a cup.
  8. Stir into liquid in baking dish and bake an additional 15 minutes or until thickened and bubbly.
  9. Bake at 325u0b0 for 55 minutes.
  10. Makes 6 servings at 248 calories each.
