Baby Cupcakes With Sultanas

  1. Preheat oven to 180C
  2. Line 36 x 30ml (1 1/2-tbs) capacity mini muffin pans with paper cases.
  3. Combine the flour, sugar and sultanas in large bowl.
  4. Combine the milk, butter, egg and vanilla essence in a large jug.
  5. Add the egg mixture to the flour mixture and stir until just combined.
  6. Spoon the mixture among the prepared muffin pans.
  7. Bake in oven for 12-15 minutes or until a skewer inserted into the centres comes out clean.
  8. Set aside for 2-3 minutes, then turn onto a wire rack.
  9. I prefer them 'naked' but if you want to ice them set aside for 1 hour to cool completely first.
