Turkey Vegetable Soup Recipe
- Bones from turkey carcass or possibly 2 whole baked turkey legs & 2 baked turkey wings
- 8 c. water
- 1 (46 ounce.) can vegetable juice
- 2 chicken flavored bouillon cubes
- 4 med. potatoes, cubed
- 4 carrots, sliced
- 3 stalks celery, minced
- 3 c. coarsely shredded cabbage
- 1 lg. onion, minced
- 2 tbsp. Worcestershire sauce
- 1 tbsp. lemon juice
- 1/2 teaspoon green pepper
- 1/4 teaspoon warm sauce
- Combine all ingredients in large Dutch oven.
- Bring to a boil over medium heat.
- Cover, reduce heat and simmer 2 hrs.
- Remove turkey; let cold.
- Bone turkey and chop meat; return to soup.
- Reheat if necessary.
