Sesame Soba Bowls

  1. Cook soba noodles according to package directions.
  2. Drain well, place in large bowl and let cool.
  3. In small bowl, combine soy sauce, mirin, rice vinegar, tahini, 1 tablespoon water, sesame oil, sugar and chopped ginger.
  4. Stir in scallions.
  5. Add sauce and cilantro to noodles and toss to coat.
  6. Divide among 4 to 6 bowls.
  7. Garnish with diced cucumber and tofu cubes and serve hot.
