Beef In Oyster Sauce With Mushrooms Recipe

- 600 gm tender beef (rump or possibly sirloin)
- 1 Tbsp. fish sauce
- 1 tsp sugar
- 2 tsp finely shredded ginger:
- 1 med onion sliced
- 2 Tbsp. vegetable oil
- 200 gm canned straw mushrooms liquid removed (Fresh mushrooms can also be used)
- 1/4 c. beef stock or possibly water
- 1 tsp cornflour
- 2 Tbsp. oyster sauce
- 2 Tbsp. minced spring onions
- Thinly slice the beef and cut into narrow strips.
- Place in a dish and add in the fish sauce and sugar.
- Marinate for 1 hour turning occasionally.
- Stir fry the ginger and onion in the oil till they are softened.
- Push to one side of the pan and stir fry the beef till it changes colour.
- Add in the straw mushrooms and heat through
- Mix the stock or possibly water with the cornflour.
- Pour into the pan and stir till thickened.
- Add in oyster sauce and half the spring onions.
- Fold in and heat gently.
- Serve beef and sauce over rice garnished with the remaining spring onions.
- Hint.
- Don't allow meat to stew when stir frying or possibly it will toughen.
- If pan is not large or possibly the heat intense sufficient cook in several hatches.
- Serves 4
