Italian Beef And Peppers
- 1 1/2 lb. boneless sirloin or round steak, fat removed (partially frozen)
- 2 peppers (red and green), very thinly sliced
- 2 Tbsp. minced parsley
- herb salt and pepper
- 4 Tbsp. olive oil
- 1 or 2 garlic cloves, minced
- 1 large onion, thinly sliced
- 1 tsp. oregano
- 2 Tbsp. Worcestershire sauce
- Cut partially frozen steak against the grain in paper thin slices.
- Heat olive oil until very hot in a large skillet or wok. Stir-fry steak over high heat (it will be done in about 60 seconds).
- Remove from pan with a slotted spoon.
- Reduce heat to medium and stir-fry garlic, onion and peppers for several minutes until crisp.
- Add tomatoes, Worcestershire sauce and oregano; cover and let simmer for 5 minutes.
- Return meat to pan, add parsley and season to taste with herb salt and pepper.
- Cook until the meat is heated through.
- Serve with rice or buttered noodles.
