Today'S Meat Loaf
- 1 1/2 lb. ground chuck
- 3/4 c. whole wheat bread crumbs
- 1/3 c. nonfat milk
- 1 tsp. margarine
- 1 small onion, chopped
- 1/2 green pepper, chopped
- 1 Tbsp. water
- 2 Tbsp. parsley
- 1/4 tsp. thyme
- 1/4 tsp. sage
- 1 Tbsp. ketchup
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 egg whites
- 2 bay leaves
- Soak bread crumbs in milk.
- Do not drain.
- Mix into meat.
- In skillet, saute onion and pepper in butter.
- Add water.
- Cover and cook for 5 minutes.
- Add with meat along with remaining ingredients except bay leaves.
- Mix well.
- Shape into loaf.
- Press bay leaves on top.
- Place on rack in shallow pan.
- Bake at 350u0b0 for 1 hour and 15 minutes.
