Buffalo Chicken and Ranch Wrap-Ups
- 1 cup flour
- 1 tablespoon black pepper
- 1 tablespoon cayenne pepper
- 1 tablespoon paprika
- 1 teaspoon salt
- 1 -2 lb chicken breast (cut into bite size pieces)
- 4 -6 tortillas
- 2 cups lettuce (chopped)
- 1 celery rib (chopped)
- hot sauce (whatever brand you like)
- ranch dressing (whatever kind you like)
- oil (or shortening or lard for frying)
- Combine the flour, black pepper, cayenne pepper, paprika, and salt in a large resealable bag.
- Add the chicken to the bag and shake to coat.
- Remove the chicken from the bag with a slotted spoon or pout into a sieve, you want to shake off the extra flour mixture.
- Fry the chicken in the oil in a large pot.
- Do it in batches, and drain on a rack so it stays crispy.
- Place the lettuce, celery, and the chicken on a tortilla.
- Put the hot sauce and the ranch dressing on the chicken.
- Roll up and enjoy!
