Election Day Cake
- 4 to 4 1/2 c. unsifted flour
- 1 c. sugar
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. cloves
- 1/4 tsp. ground mace
- 2 pkg. yeast
- 3/4 c. margarine
- 1 1/2 c. hot water
- 2 eggs, room temperature
- 1 1/2 c. seedless raisins
- 3/4 c. pecans, chopped
- 1/4 c. chopped citron
- In a large bowl, thoroughly mix 1 3/4 cups flour, sugar, salt, cinnamon, nutmeg, cloves, mace and undissolved yeast.
- Add margarine.
- Gradually add very hot tap water to dry ingredients and beat 2 minutes at medium speed of electric mixer.
- Add eggs and 3/4 cup flour or enough flour to make dough thick batter. Beat on high speed 2 minutes.
- Add raisins and citron; stir well until mixed.
- Put into greased pan; cover and let rise in warm place until double, about 1 1/2 hours.
- Bake at 375u0b0 for about 45 minutes.
