Egg and Dairy-free Easy Cupcakes

• 200 grams Pancake mix
• 200 ml Rice milk (or soy milk)
• 2 1/2 tbsp Oil (Canola or olive oil)
• 2 tbsp Soft light brown sugar
• 3 shakes Vanilla extract

1. Put all of the ingredients into a bowl and mix together.
2. Pour into the cupcake molds and bake for 20-25 minutes in a preheated 180C oven.
