Chicken in Mushroom Cream Sauce
- 6 boneless skinless chicken breasts
- 12 cup chicken broth
- salt and pepper, to taste
- 8 ounces penne pasta (any shape will do)
- 1 large sweet onion, chopped
- 2 tablespoons garlic, chopped
- 2 (8 ounce) packages mushrooms, sliced
- 2 cups creme fraiche (can use Sour Cream)
- 6 ounces feta cheese
- In a large skillet, saute chicken breasts, onion and garlic in olive oil over medium heat.
- Once breasts are browned, add chicken broth and salt and pepper to taste.
- Let simmer for 15 to 20 minutes, or until chicken is cooked through and juices run clear.
- Remove chicken from skillet and cube, add mushrooms and saute until soft.
- Add cubed chicken, creme fraiche and feta.
- Stir all together and heat through.
- Put hot cooked pasta on plate, top with chicken mixture.
- Note: Cook pasta according to directions while chicken is simmering.
