Emeril's Ale

  1. In a large, nonreactive stock pot, add malt syrup and water.
  2. Add hops.
  3. Bring to a boil.
  4. Reduce heat to a simmer and boil for 1 hour, stirring often.
  5. Cool.
  6. Strain the hop mixture and pour, through a funnel, into a sterilized 7 gallon fermenting tank.
  7. Add the water.
  8. Add the yeast.
  9. Seal the top with a stopper.
  10. Ferment for 1 1/2 weeks.
  11. Strain the beer.
  12. Bottle and age for another 2 to 3 weeks.
