Holiday Rum Balls
- 1 cup powdered sugar
- 2 tablespoons cocoa powder
- 2 1/2 cups vanilla wafers crushed
- 1 cup pecans finely chopped
- 2 teaspoons vanilla extract
- 3 tablespoons corn syrup, light
- 3 tablespoons rum
- 1/4 teaspoon almond extract
- Sift cocoa and confectioners sugar together and combine with cookie crumbs and pecans.
- Add corn syrup, rum and flavorings.
- Roll into 1 inch balls, and then roll in granulated sugar.
- Store in a tightly sealed container in the refrigerator.
- Maker 2 dozen.
