Citrus Chicken and Rice
- 4 chicken breasts, skinless, boneless
- 1 34 cups Swanson chicken broth
- 12 cup orange juice
- 12 cup onion, chopped
- 1 cup uncooked long-grain white rice
- 2 tablespoons fresh parsley, chopped
- orange slice
- Cook chicken in medium nonstick skillet over mediump-high heat 10 minutes, or until browned.
- Set chicken aside.
- Add broth, orange juice, onion and rice.
- Heat to boil.
- Cover and cook over low heat 10 minutes.
- Return chicken to skillet.
- Cover and cook 10 minutes, or until chicken and rice are done.
- Stir in parsley.
- For a special touch, saute orange slices in a hot nonstick skillet until lightly browned.
- Serve over chicken.
