Grilled Apricot Pork Skewers

  1. In a large resealable bag combine pork, apricot preserves, honey, oil, rosemary and red pepper flakes.
  2. Seal the bag and turn to coat all the ingredients.
  3. Refrigerate for 1-8 hours.
  4. If using wooden skewers soak them in water for 1/2 hour before using.
  5. Preheat grill to medium high (350 to 400).
  6. Remove pork and reserve marinade.
  7. Alternately thread pork and apricots onto skewers.
  8. Brush with reserved marinade and discard marinade.
  9. Place skewers on grill.
  10. Grill covered for 6-8 minutes or until pork registers 160 degrees.
  11. Turn occasioanlly.
  12. If desired serve on a bed of watercress or mixed greens and sprinkle with additional rosemary.
