Grilled Apricot Pork Skewers
- 1 lb pork loin, cut into 2 inch cubes
- 14 cup apricot preserves
- 1 tablespoon honey
- 1 teaspoon olive oil
- 2 tablespoons chopped fresh rosemary
- 14 teaspoon crushed red pepper flakes
- 4 fresh apricots, pitted, cut into wedges
- 2 cups fresh watercress (optional) or 2 cups mixed greens (optional)
- In a large resealable bag combine pork, apricot preserves, honey, oil, rosemary and red pepper flakes.
- Seal the bag and turn to coat all the ingredients.
- Refrigerate for 1-8 hours.
- If using wooden skewers soak them in water for 1/2 hour before using.
- Preheat grill to medium high (350 to 400).
- Remove pork and reserve marinade.
- Alternately thread pork and apricots onto skewers.
- Brush with reserved marinade and discard marinade.
- Place skewers on grill.
- Grill covered for 6-8 minutes or until pork registers 160 degrees.
- Turn occasioanlly.
- If desired serve on a bed of watercress or mixed greens and sprinkle with additional rosemary.
