Popcorn chicken, Peaches, Pecan, Spinach Salad
- 2 tbsp chopped pecans
- 1 cup fresh peach slices (from 2 peaches)
- 1 bag (6 ounces) spinach
- 1/4 cup thinly sliced red onion
- 1/2 cup bottled poppy seed salad dressing
- 1 packages (12 ounces) frozen popcorn chicken pieces
- Preheat oven to 450F.
- Place the popcorn chicken pieces on a baking sheet.
- Bake until the chicken is heated through and crisp, 10 to 12 minutes.
- Meanwhile, place the spinach in a large serving bowl.
- Scatter the peach slices on top of the spinach.
- Add the onion.
- Scatter the pecans on top.
- Add the chicken pieces when they are ready.
- Pour the dressing over the salad.
- Toss gently and serve.
- *This recipe serves 4 if you're using it as a main course.
