Funfetti Protein Breakfast Quinoa
- 2 cups Unsweetened Vanilla Almond Milk, Plus Additional For Serving
- 1 cup Quinoa, Uncooked
- 1/4 cups Truvia, Divided (Or Sweetener Of Choice, To Taste)
- 1/2 cups Vanilla Protein Powder
- 3 Tablespoons Unsweetened Vanilla Almond Milk
- Sprinkles
- For the quinoa: In a large pot bring almond milk to a boil.
- Once boiling, stir in quinoa and half of the Truvia.
- Cover, reduce heat to low, and cook until most of milk is absorbed, about 2025 minutes.
- Once quinoa is cooked, stir in remaining Truvia (see note below) and divide quinoa between bowls.
- For the protein frosting: In a small bowl, stir together vanilla protein and almond milk until consistency of frosting (see note below).
- Dollop frosting on bowls of quinoa and cover with sprinkles.
- Pour a little bit of almond milk over top of each bowl and devour.

- Depending on how sweet your protein is, you may need less or more Truvia.
- So adjust to your preferences.
