Date Loaf
- 1 large eggs
- 1 cup sugar
- 1 tablespoon butter
- 1 1/2 cups flour, unbleached all-purpose
- 18 teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 cup dates chopped,small
- 1 cup water boiling
- Sprinkle baking soda over dates, add boiling water, let stand for 10 minutes and then cool completely.
- Cream butter and sugar.
- Add egg;beating well.
- Sift together flour and salt and add to the creamed mixture.
- Add vanilla and date mixture.
- Mix well.
- Pour into a greased 9-in.
- x5-in.
- x3-in.
- loaf pan.
- Bake at 350F (180C).
- for 40 to 45 minutes or until a toothpick comes out clean.
- Cool 10 minutes in the pan before moving to a wire rack to cool completely.
- This loaf is good served with a little butter spread on it.
