Elk Parmesan

  1. Cut meat into six pieces.
  2. pound with a meat mallet to tenderize.
  3. Sprinkle with garlic salt and pepper.
  4. Combine bread crumbs and the parmesan cheesein a bowl.
  5. In another bowl, beat eggs with water.
  6. Dip both sides of meat into flour, then into egg mixture.
  7. Press each side of meat into crumb mixture; refrigerate for 20 minutes.
  8. Heat oil in a large skillet; brown meat on both sides.
  9. Place in a greased 13x9x2-inch pan.
  10. Spoon 2 tablespoons spaghetti sauce over each piece.
  11. Cover with mozzarella; top with remaining sauce.
  12. Bake uncovered at 350F for 30 minutes oruntil meat is tender.
  13. Sever over noodles.
