Chocolate Mint Cookies
- 3/4 c. oleo
- 1 1/2 c. packed brown sugar
- 2 c. (12 oz.) chocolate chips
- 2 eggs
- 2 Tbsp. water
- 2 1/2 c. flour
- 1 1/4 tsp. soda
- 1/2 tsp. salt
- Andes candies mint wafers
- Cook oleo, sugar and water in large pan over low heat until melted.
- Add chocolate chips and stir until partially melted. Remove from heat and continue to stir until chocolate is completely melted.
- Pour into large mixer bowl and let stand 10 minutes.
- Beat in eggs, one at a time, on high.
- Reduce to low and add dry ingredients.
- Mix well.
- Chill 1 hour.
- Line cookie sheet with aluminum foil.
- Roll into ball and bake 2-inches apart at 350u0b0 for approximately 12 minutes.
- Place mint candies on top and let set until soft.
- Swirl to ice cookie.
