Lemon Fennel Salad
- 1/2 tsp lemon zest
- 2 tbsp lemon juice
- 2 tsp olive oil
- 1/4 tsp salt
- 1 each fennel bulb (1-1/4 lb)
- 1 1/2 tsp grated Parmesan cheese
- 1/4 cup nuts (walnut, hazelnuts, pinenuts, almonds, pistachios or sunflower seeds)
- Add all ingredients in a bowl and mix.
- Note: I added some vinaigrette dressing for a little more flavor.
- Pour over lettuce and sprinkle with nuts and Parmesan cheese.
