Divine Rice Casserole(Serves 12)
- 2 lb. cubed beef or 1 lb. beef and 1 lb. pork, cubed
- 1/2 c. chopped green peppers
- 1 medium onion, chopped
- 8 stalks celery, chopped and parboiled in 2 c. water (save water)
- 1 small jar pimentos, chopped
- 1 c. Uncle Ben's converted rice
- 2 cans mushroom soup
- 2 cans cream of chicken soup
- 2 cans celery water
- Brown meat in a small amount of cooking oil; season meat with salt and pepper or seasoned salt.
- Parboil celery.
- Saute onions and pepper lightly in the same skillet you browned meat in.
- Mix all ingredients together; pour into buttered casserole dish.
- Bake at 375u0b0 for 2 1/2 hours or until meat is done.
- Makes 1 large or 2 small casseroles.
