Pork and apple caserole
- 500 grams Diced pork
- 3 Cooking apples peeled, cored and chopped into large chunks (do this as late as possible as peeled apples brown incredibly quickly)
- 1 Red pepper, sliced
- 1 Yellow pepper, sliced
- 2 Red onions, chopped
- 2 Garlic cloves, chopped
- 1 Veg stock cube
- 500 ml Warm water
- 1 tbsp Paprika
- 2 tbsp Plain flour
- 1/2 tsp of basil
- 1 Salt
- 1 Pepper
- 1 dash Olive oil
- Add the basil to the flour and mix with the diced pork until covered.
- Add the olive oil to a hot pan and cook the pork until sealed and lightly browned.
- Move the pork into a caserole dish and add the red and yellow peppers, apples, onions and garlic.
- You can also add any spare flour and basil mix.
- Mix the veg stock cube with the 500ml of warm water, mix well and pour into the caserole dish.
- Add the paprika and stir among the whole dish.
- Place the caserole dish with lid into a pre heated 200c oven for 1 and a half hours.
- Salt and pepper to taste.
- Nice served with mashed potatoes or rice.
