Old-Time Gingerbread With Warm Lemon Sauce
- 1 3/4 c. all-purpose flour
- 1/2 c. sugar
- 1/2 c. salad oil
- 1/2 c. molasses
- 1 tsp. baking soda
- 1 tsp. ground ginger
- 1/2 tsp. ground cinnamon
- 1/2 tsp. salt
- 1 large egg
- Warm Lemon Sauce (recipe follows)
- Preheat oven to 350u0b0.
- Grease and flour a 9 x 9 x 2-inch baking pan.
- Into large bowl, measure 1/2 cup boiling water and all ingredients except Warm Lemon Sauce.
- With mixer at low speed, beat until well blended, constantly scraping bowl with rubber spatula.
- Increase speed to high; beat 2 minutes, occasionally scraping bowl.
- Pour batter into pan.
- Bake 35 to 40 minutes or until toothpick inserted in center comes out clean.
- Cool gingerbread in pan on wire rack 10 minutes to serve warm or cool completely on rack to serve later.
