Strawberry Delight
- 4 1/2 c. angel food cake, cubed
- 1 c. cold milk
- 3 1/4 oz. pkg. vanilla pudding mix
- 1 pt. vanilla ice cream, softened
- 1 1/2 c. boiling water
- 10 oz. pkg. frozen strawberries, thawed
- 3 oz. pkg. strawberry gelatin
- Place cake cubes in a 13 x 9-inch casserole dish.
- Mix milk and package of vanilla pudding mix.
- Cook according to directions. Cool; stir in softened vanilla ice cream and beat until well blended.
- Pour mixture over cake cubes and chill until firm. Combine boiling water with strawberry gelatin in another bowl. Stir until dissolved.
- Add frozen strawberries; blend well and chill until slightly thickened.
- Pour over pudding mixture.
- Do not stir.
- Chill until firm or overnight.
- Serve plain or with whipped cream, topped with strawberries.
