Honey Dijon Pasta & Ham
- 4 cups uncooked farfelle (bow tie) pasta
- 2 cups light sour cream
- 1/4 cup Dijon-style mustard
- 2 tablespoons honey
- 12 ounces thick sliced deli reduced fat cooked ham, cut into 1/2-inch cubes
- 2 tablespoons finely chopped green onion
- 1 (1-pound) package frozen vegetable combination (broccoli, carrots and cauliflower)
- Cook pasta according to directions.
- Drain.
- Combine sour cream, mustard and honey in bowl; mix well.
- Set aside.
- Place ham and onion in 12-inch nonstick skillet.
- Cook over medium-high heat, stirring occasionally, 3-4 minutes or until ham is lightly browned.
- Add vegetables.
- Continue cooking, stirring occasionally, 5-7 minutes or until vegetables are crisply tender.
- Reduce heat to medium-low.
- Add cooked pasta and sour cream mixture; stir gently to coat.
- Cook 1-2 minutes or until heated through.
